Servers need to be fifth grade or above.  Servers assist the celebrant with Mass.  If a cross is used for procession, the server carries it.  The server holds the book for the priest when he is not at the altar, collects the wine, bread and water at the preparation of gifts.  The server washes the hands of the priest and, in general, helps the deacon and priest during Mass.
